New menu at Privateer’s Cove

All hands on deck for the latest bounty of culinary offerings at Privateer’s Cove!

The eclectic restaurant in Kailua-Kona will soon be unveiling some new specialty items never before seen on the Privateer’s Cove menu, including delicious, low-fat, low-cholesterol Buffalo Burgers, coming soon to Privateer’s Cove.

Located in the Old Industrial next to Broke Da Mouth Grindz, Privateer’s Cove is known for its adventurous menu highlighting specialty game meat such as Camel Burgers, served every Wednesday for Hump Day. Open six days a week, Monday through Saturday, for lunch and dinner, Privateer’s Cove combines steampunk pirate themes with fascinating offerings that focus on healthy eating.

Indeed, the wild game served at Privateeer’s Cove is generally more sustainable than most beef. No salt is added to the dishes, except for a few items like the filet mignon and the mascarpone, says proprietor Nick Traxler.

“The food here will make you eat healthy whether you want to or not.”

Nick changes up the menu quite frequently based on what is available that week. Currently, the Rack of Lamb from South Australia is prepared “seared off” and then baked with a Dijon-Parmesan crust. Cooked in a cast-iron skillet, the Duck Breast from Canada features a sweet orange cream sauce. Served rare, the filet mignon is prepared with Frangelico cream sauce.

Elk and deer are among the specials that rotate on and off the menu at Privateer’s Cove depending on availability. The current menu also features the always-popular Chicken Schnitzel, featuring hand-breaded chicken breast lightly fried with lemon butter. Additionally, the Kauai Shrimp, which is stuffed with blue crab, and topped with mozzarella and red coconut curry, is a customer favorite.

Although lean game meat takes center stage, there are options for vegetarians, too. Seasoned with French black truffle oil, the Mac &Cheese unveils a savory combination of American Cheddar and French blue cheese. For lunch, the build-your-own stir-fry includes choice of chicken, beef and shrimp, plus homemade sauces (Thai peanut, coconut red curry) and plenty of vegetables. The stir-fry lunch can be packaged to go.

Privateer’s Cove features a fun, communal atmosphere where customers can watch the goings-on in the open kitchen from their table, dispense their own sodas and beverages, bring their own booze, converse across the room with Nick and his sous chefs, or share tables with strangers if the restaurant is full.
